At Bâton Rouge, we believe in creating more than just meals—we create experiences that are rooted in the communities we serve. Our Halifax location is no exception. Set in the heart of the city at 1877 Hollis Street, Bâton Rouge has found a home in the historic Morse’s Tea Building, a landmark that carries nearly two centuries of Maritime heritage.
Since 1992, Bâton Rouge has seamlessly integrated into neighbourhoods across Canada, bringing our signature flame-grilled dishes and warm, attentive service to guests from all walks of life. In Halifax, that tradition continues inside one of the city’s most iconic addresses. We didn’t just move into a building—we became part of its story.
Originally constructed in 1841 as the Jerusalem Warehouse, the site was once home to the Jerusalem Coffee House before it was lost to fire. Later known as the Morse’s Tea Building, it served as a vital hub for downtown trade and commerce. While the original signage has faded, the spirit of the space remains strong—a symbol of Halifax’s rich commercial past and resilient urban identity.
For us, that history isn’t just interesting—it’s essential. The warmth of exposed brick, the character of tall warehouse windows, and the unmistakable charm of the building all reflect what Bâton Rouge stands for: timeless quality, attention to detail, and a sincere respect for where we are.
Today, as our guests step through the doors, they’re not just entering a restaurant. They’re entering a space that has welcomed generations before them. We honour that legacy by offering a menu built on premium ingredients, signature slow-cooked ribs, and a carefully curated wine and cocktail list—all delivered with genuine, down-to-earth hospitality.
From lunch with colleagues to date night, or a family dinner before a waterfront stroll, Bâton Rouge Halifax is a place where moments are made—and where the past quietly enriches every experience.
