The Story of the Tower


Let us introduce you to our Head Chef at Bâton Rouge Grillhouse & Bar, Charles Dufresne. His passion for culinary is something that radiates from his soul.

Having been in the industry for almost 30 years he is no stranger to the constant changes and innovations happening within the industry.

A corner stone of our brand lies within our ability to innovate and move as the industry moves, so let us take you on the journey to find our newest dish that has knocked off the socks of not only our franchisees but our guests as well.

In 2019 during a research and development trip to Vancouver (not long before the world shut down) something Charles noticed that was up and coming was the ever-growing popularity of the tower. It was a perfect shareable opportunity and visually extremely appealing given the WOW factor we are always searching for.

The idea was then bounced around and the ideas began to flow, but then something happened, and we all know what that is. The world shut down and the restaurant industry took a massive hit. The up and down of the industry that took place was unprecedented and honestly, we were just trying to survive.

Once things started to balance out, we saw this as the perfect opportunity to begin working on a tower that made sense for our brand.

Now the question was how we would sell it to the franchisees and the team to make it happen, this is when Charles had to get to work on making his case.

“Seafood towers or just towers in general were only seen in independent higher end restaurants. No chain as far as I knew ever tried it, this created a lot of concern operationally.” – Charles Dufresne So, instead of doing a classic seafood tower or platter, Charles put together a tower of all our signature item's, soon to be known as the grill master tower.

While all this magic was happening behind the scenes, our 30-year anniversary as a brand was approaching, this is where marketing came in to take the lead on how we would promote our new evolving tower to guests.

By combining the 30-year celebration with the release of our brand-new grill master tower we created an instant hit and classic within the brand.

The launch happened in 2022 and now the tower is a guest favourite, it is currently available in select locations and is a fantastic shareable if you want to get a little bit of everything and understand the real taste of Bâton Rouge Grillhouse & Bar.
